Health code: Many health departments require hot water and a handwashing sink.
Convenience: Regardless of requirements, a sink and faucet are very nice as a water source and for cleanup.
Keep it simple: Doing private events where there is a sink close by? In this case you may not need a sink on the cart and the space can be used for something else.

Are you right handed or left handed?
Is the steam wand on your espresso machine on the right or left side? (this isn’t a huge issue, but can play a part in your workflow)
